JPEGs Disappearing When Saved Using Snipping Tool

I recently installed Windows 7 on my laptop and have noticed a peculiar issue...when I save a jpeg to a folder or the desktop and then go to change the date, after I hit enter to confirm the change the image disappears from view. The same thing happens when I try and save a jpeg using the Snipping Tool, as well - the image is just gone! However, if I try to download a new image without changing the date and name it the same as the image that vanished, it won't let me do it because the name is already in use. So it appears that the image is still within the folder, but I can't get access to it.
